What is the recommendation for the camera switch on or off at night? If we should be turning the camera switch in the room off every night and back on in the morning or does the switch stay on at all times?

You should leave the cameras on all the time and simply power cycle them each morning leaving them off for about a minute or two.
If you switch them off at night you will have to wait 20-30 min minimum after turning them back on in the morning before doing the daily checkout.
